Fionn mac Cumhaill Whiskey Roasted Salmon

1/4 cup cider vinegar

1/4 cup Irish whiskey

1-1/2 tbs honey

2 tbs vegetable oil

4 Salmon fillets (1/2 lb each)

salt and freshly ground black pepper

2 tsp fresh parsley or dill

1 lemon cut into wedges

 

Mix vinegar, honey, whiskey and oil. Pour over fillets and marinate in refrigerator for 1-4 hours, turning fillets at least once.

 

Adjust oven rack to the middle position and preheat oven to 450°F.

 

Remove from marinade and place fillets in a roasting pan.

 

Sprinkle with salt, pepper and parsley or dill.

 

Bake for 10-12 minutes, basting with marinade until golden and flaky.

 

Serve with lemon wedge.
